De quelques flatteries…<\/h3>\n

Prenez la moiti\u00e9 d’une roue de tomme, fromage des Hautes-Alpes. (Bon, on n’en veut pas trop \u00e0 Toulouse Lautrec pour cette m\u00e9prise…)<\/p>\n

Piquez ce morceau avec une fourchette en m\u00e9tal \u00e0 long manche et pr\u00e9sentez cette tranche \u00e0 un clair feu de bois de sapin. Lorsque le fromage commence \u00e0 fondre<\/strong>, raclez le avec un couteau en bois et d\u00e9posez un rond bouillant de cinq \u00e0 huit centim\u00e8tres sur les assiettes, pos\u00e9es sur des r\u00e9chauds de braise. Salez l\u00e9g\u00e8rement, et poivrez.<\/p>\n

Accompagnez ces ronds de fromage, dits raclettes, de pommes de terre grill\u00e9es sous la cendre<\/strong>, et de vin de Fendant, ou de tout autre vin ayant go\u00fbt de pierre \u00e0 fusil. Avalez des raclettes tant que vous le pourrez.<\/p>\n

“Ce plat est recommand\u00e9 aux chasseurs de chamois, et aux alpinistes, qui, apr\u00e8s plusieurs journ\u00e9es de haute montagne, reviennent ext\u00e9nu\u00e9s de fatigue, n’ayant qu’envie de boire et incapables d’absorber un aliment solide tels que pain, viande.”<\/h1>\n
